Pineapple Wine 15%ABV

Fresh tropical fruits make wonderful white wine. They are full of aromas and flavors that grape wines cannot even think of matching. I find the clear, bubbly (sparkling) white wine with at least 3-5% residual sugar the best. However some people like the yellowish fresh wine which resembles spiked fruit punch. A dash of chili and a good company of friends is all you need to have a wonderful experience with this pineapple wine.

You can make this from fresh pineapples or packed

Equipment

  • Juicer or Mixie to Juice the fruits
  • Fine cloth or sieve to filter

Ingredients
  

  • 2 pieces pineapple 1 pineapple per liter bottle is ideal
  • 300 gm table sugar
  • 1 sachet Fruit Cider Yeast

Instructions
 

  • Pick an overripe pineapple. slide it into large chunks and juice them

  • Juice it and add some sugar and wine/cider yeast to it. Alternatively, you can buy packed pineapple juice and add about 150gm of sugar to it.

  • Put it in a fermenter and place it under an airlock

  • After 3 days bubbling will stop. You can serve the fresh alcoholic pineapple wine in a glass made of pineapple peels.

  • Alternatively, you can age it for about a month (4 weeks) and allow it to clear naturally. 1gm of pectin enzyme (per liter) to help clear faster.

    Sir,my pineapple wine has become acidic after fermentation.there was no chance for oxidation.any chances to fix it.last batch was fine one
