to make sparkling wine start by making a wine not over about 10-11% alcohol. Age and rack until clear, adding NO campden tablets (potassium metabisulfite) or sorbate after fermentation. When the wine's clear, add about 1 pound (maximum!) sugar to 5 gallons of wine. Bottle in champagne or non-twist-top beer bottles, place in a warm room for a few weeks, then cool, open and enjoy. Beer crown caps work perfectly (if new!), or you can cork if you have the top of the line floor corker but it's still a huge pain, the corks are huge, and then you have to wire them down. Try it, it's fun!
